Looks like ivory to me not plastic or bone. On higher classes of these knives I think.

who talk about "plastic" or "bone" ?
nobody
but, there are several kind of "ivory"
- elephant
- fossil from mammoth,
after the banning of elephant ivory in 1999,
fossil ivory became much in demand as an alternative medium to elephant ivory
- walrus tusk ivory comes from two modified upper canines.
The folk art of walrus ivory carving has been popular in European Russia since the Middle Ages
it's this "ivory" we have mentioned
