Looks like ivory to me not plastic or bone. On higher classes of these knives I think.

- elephant
- fossil from mammoth,
after the banning of elephant ivory in 1999,
fossil ivory became much in demand as an alternative medium to elephant ivory
- walrus tusk ivory comes from two modified upper canines.
The folk art of walrus ivory carving has been popular in European Russia since the Middle Ages
